Herring And Potato Casserole Recipe
Ingredients
| Potatoes | 3 Large | |
| Onion | 1 Large | |
| Butter | 2 1/2 Tablespoon | |
| 2 matjes herring fillets cut in 1/2-inch diagonal slices | ||
| black pepper | 1 | |
| Bread crumbs | 1 Tablespoon | |
| 1/3 cup light or heavy cream | ||
Directions
Peel and cut the potatoes into 1/8 inch slices.
Put them in cold water to keep them from discoloring.
Peel and slice the onion.
Cook the onion lightly in 2 tablespoons of butter until soft and transparent.
Butter a 2-quart baking dish.
Drain the potatoes and dry off any excess moisture with a paper towel.
Put a layer each of potatoes, herring, and onion in the baking dish.
Continue with alternate layers, ending with potatoes on top, and seasoning each layer with pepper.
Sprinkle the top layer with bread crumbs and dot it with butter.
Bring the cream to a boil on top of the stove.
Then pour the hot cream over the casserole.
Bake the casserole at 400°F for 1 hour or until the potatoes are tender.
