Whole Wheat Hermits Recipe

Hermit cookies are delightful little cookies that are usually baked with a batter depressed in the center like a pit or a cave. These hermit cookies are baked with goodies like nuts, cherries, dates, fruits and raisins. Spiced with cinnamon , nutmeg and cloves, the hermit cookies are rich and snacky.

Ingredients

 
1 cup seedless raisins, washed and dried
 
1 cup chopped dates
 
1/2 cup chopped mixed fruit, as sold for fruitcake
 
1/2 cup candied cherries, quartered
 
1/2 cup chopped nuts
 
1/2 cup soft butter
 
1/2 cup soft shortening
 
1 1/2 cups brown sugar
 
1/3 cup cream-style honey
 
1 tsp. vanilla
 
3 medium eggs, beaten
 
2 cups sifted all-purpose flour
 
1 tsp. baking powder
 
1/2 tsp. baking soda
 
1/2 tsp. salt
 
1 tsp. cinnamon
 
1/2 tsp. nutmeg
 
1/4 tsp. cloves
 
1/2 cup unsifted whole-wheat flour

Directions

Prepare fruits and nuts.
Cream butter and shortening together, then add the brown sugar gradually.
Beat well.
Add honey, vanilla and beaten eggs.
Combine thoroughly.
Add sifted dry ingredients and stir in the whole wheat flour and fruits and nuts.
Chill for 1 hour.
Drop by heaping teaspoonfuls on greased cooky sheets and bake at 375F for 8 to 10 minutes.
Cool on a cake rack.
