Hermits Recipe

Hermits at a great midday snack. It is a healthy snack, filled with the goodness of raisins and nuts. What i like best about these is that they have a slight touch of sweetness which satisfies my midday sweet cravings as well!

Ingredients

 
Butter or margarine - 1/2 cup
 
Sugar - 1/2 cup
 
Unsulphured molasses -1/2 cup
 
Eggs - 2
 
Sifted all-purpose flour - 2 cups
 
Salt - 1/2 teaspoon
 
Baking soda - 1/4 teaspoon
 
Baking powder - 2 teaspoons
 
Cinnamon - 1 teaspoon
 
Cloves - 1/2 teaspoon, ground
 
Mace - 1/4 teaspoon
 
Nutmeg - 1/4 teaspoon
 
All spice - 1/8 teaspoon
 
Raisins - 3/4 cup
 
Nuts - 1/2 cup, chopped

Directions

GETTING READY
1) Grease a 12x 8x2-inch baking pan.

MAKING
2) In a bowl, add the butter and sugar and cream till light and fluffy.
3) Add in the molasses and eggs and beat well.
4) Sift together the flour, salt, baking soda, baking powder and spices.
5) Stir in the raisins and nuts.
6) Add to the molasses mix and blend well.
7) Spread evenly in the baking pan.
8) Place in the oven at 350° F and bake for 30 minutes.
9) Cool.

SERVING
1) While still warm, spread with Confectioners' Sugar Icing.
2) Cut into squares and serve.
