Hermit Bar Cookies Recipe
Hermit bar cookies are delightful square shaped cookies made with a variety of goodies. Baked with a batter of flour with eggs, molasses and a medley of spices, the hermit bar cookies also contain raisins and candied ginger.
Ingredients
1 cup all-purpose flour 250 mL
1 cup whole wheat flour 250 mL
3/4 tsp baking powder 4 mL
3/4 tsp baking soda 4mL
3/4 tsp cinnamon 4 mL
1/2 tsp ground ginger 2 mL
1/2 tsp nutmeg 2 mL
pinch ground cloves pinch
1 egg 1
1 egg white 1
3/4 cup brown sugar 175 mL
3 tbsp molasses 45 mL
1/3 cup vegetable oil 75 mL
1/2 cup raisins 125 mL
1/4 cup chopped candied ginger 50 mL
Directions
In bowl, mix together flours, baking powder, baking soda, cinnamon, ground ginger, nutmeg and cloves.
In large bowl, beat egg and egg white with sugar, molasses and vegetable oil.
Add dry ingredients to egg mixture and combine thoroughly.
Add raisins and candied ginger.
Pat batter into lightly oiled or parchment paper-lined 15 x 10-inch/40 x 25 cm baking sheet.
Bake in preheated 375°F/190°C oven for 15 minutes, or until cooked through but not hard.
Cut into squares while warm and cool on racks.
