Directions

In a large bowl, combine flour, thyme, nutmeg and salt.
Make a well in the center.
In another bowl, whisk together milk, mustard, oil and eggs.
Pour into flour mixture, whisking until smooth and blended.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake at 450° F (230° C) for 15 minutes.
Reduce heat to 375° F (190° C) and bake for 20 to 25 minutes or until crusty and golden brown.
NOTE: For this particular recipe it is best not to preheat the oven but to turn it on as you are placing the muffin tins inside.
