Herbed Fish Grill Recipe
Ingredients
| Fish | 2 pound | |
| Butter | 1/2 Cup (16 tbs) | |
| Coriander seed | 1 Teaspoon, crushed | |
| Cardamom | 1/4 Teaspoon | |
| Lemon juice | 2 Tablespoon | |
| Yogurt | 1 Cup (16 tbs) | |
| Fresh fennel, dill, or other leafy herb | ||
| 1 teaspoon salt and dash pepper | ||
| 1 teaspoon salt and dash pepper | ||
Directions
Salt cleaned fish.
Melt butter; mix in seasonings, lemon juice, and yogurt.
Coat fish inside and out with mixture.
Place in wire broil basket and cook over coals till fish browns on both sides and flakes when tested with a fork (about 25 to 30 minutes) €” brush often with the sauce.
Ten minutes before end of cooking time, make bed of leafy herbs on grill top; lay fish atop.
Grill till herbs smolder and flavor the fish, turning once.
Heat remaining sauce to pass.
