Herbed Cucumber With Shrimp Recipe
Ingredients
| Cucumber | 1 , cubed | |
| Red bell pepper | 1 Large, cubed | |
| Butter | 1 Tablespoon | |
| Honey | 1 Tablespoon | |
| Lime juice | 3 Tablespoon | |
| White rum | 2 Tablespoon | |
| Shrimp | 2 Ounce | |
| Cayenne pepper | 1 To taste | |
| 2 fresh mint sprigs | ||
| Chive | 4 | |
| 6 fresh chervil sprigs | ||
Directions
Put 1 cup (250 ml/8 fl oz) of water in the lower compartment of a microwave steamer and heat in the oven for 2 minutes on HIGH.
Put the cucumber in the upper compartment of the steamer.
Season with salt.
Add the bell pepper.
Cover the steamer and microwave on HIGH for 6 minutes.
Put the butter, honey, lime juice and rum in a casserole.
Add the shrimp (prawns), a pinch of cayenne pepper, the cucumber and bell pepper.
Stir well.
Taste and adjust seasoning.
Cover and microwave on HIGH for 2 minutes.
Rinse the mint, chives and chervil, pat dry on kitchen paper and chop finely.
Stir the herbs into the casserole.
Put the cucumber in the upper compartment of the steamer.
