Ingredients

 24 cooked scallops
 1 garlic clove, lightly crushed
 Vinegar50 Milliliter
 1 red chilli, seeded and finely sliced
 Orange juice3 Tablespoon
 Lime juice50 Milliliter, squeezed
 24 peeled cooked king prawns, deveined
 1/4 green pepper, cut into fine strips
 60g stuffed green olives, halved
 Coriander2 Tablespoon, chopped
 Sunflower oil125 Milliliter

Directions

Combine scallops and prawns in a bowl.
Add vinegar, lime juice, orange juice and garlic.
Mix well, cover and chill for 2 hours.
Strain seafood mixture, reserving marinade.
Place seafood in a salad bowl and add chilli, green pepper, olives and coriander.
Toss.
Add oil to reserved marinade and whisk well.
Pour dressing over salad and toss lightly.
Garnish with lemon slices.
