Herbed Seafood Salad Recipe
Ingredients
| 24 cooked scallops | ||
| 1 garlic clove, lightly crushed | ||
| Vinegar | 50 Milliliter | |
| 1 red chilli, seeded and finely sliced | ||
| Orange juice | 3 Tablespoon | |
| Lime juice | 50 Milliliter, squeezed | |
| 24 peeled cooked king prawns, deveined | ||
| 1/4 green pepper, cut into fine strips | ||
| 60g stuffed green olives, halved | ||
| Coriander | 2 Tablespoon, chopped | |
| Sunflower oil | 125 Milliliter | |
Directions
Combine scallops and prawns in a bowl.
Add vinegar, lime juice, orange juice and garlic.
Mix well, cover and chill for 2 hours.
Strain seafood mixture, reserving marinade.
Place seafood in a salad bowl and add chilli, green pepper, olives and coriander.
Toss.
Add oil to reserved marinade and whisk well.
Pour dressing over salad and toss lightly.
Garnish with lemon slices.
Add vinegar, lime juice, orange juice and garlic.
Mix well, cover and chill for 2 hours.
