Herbed Marinated Lamb Chops Recipe
Ingredients
| Extra virgin olive oil | 1/4 Cup (16 tbs) | |
| Red wine vinegar | 2 Tablespoon | |
| 1 tablespoon jarred minced garlic | ||
| Italian herbs | 1/2 Tablespoon, dried | |
| 8 loin lamb chops (1 1/2 inches thick, about 2 1/3 pounds total) | ||
| Ground black pepper | 1 To taste | |
| Salt | To Taste | |
Directions
1. Combine oil, vinegar, garlic, dried herbs, and 1/2 teaspoon pepper in a large plastic bag. Add chops, squeeze out excess air, and seal bag completely. Turn bag to coat chops with marinade and then chill 30 minutes.
2. Heat a grill pan over medium heat until hot but not smoking. Remove chops from marinade and season with salt and pepper. Place chops in pan, cover loosely with foil, and cook 7 minutes. Turn and cook, covered, 5 minutes longer for medium-rare. Transfer chops to plates and let stand 5 minutes before serving.
