Herbed Cheese Ball Recipe

Ingredients
1 package (7 1/2 ounces) farmers cheese
4 ounces plain goat cheese or 1/2 cup small-curd low-fat (1% milk fat) cottage cheese
1/2 cup shredded Cheddar cheese (2 ounces)
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crumbled
1/2 teaspoon dry mustard
1/8 teaspoon black pepper
1/3 cup minced parsley
8 strips roasted red pepper, 3 inches by 1/2 inch (optional)
Directions
1 ln a food processor, whirl the 3 cheeses, rosemary, mustard, and black pepper for 30 seconds or until smooth.
Line a small bowl with a 12 inch square of plastic food wrap and scrape the mixture into the bowl.
Gather up the plastic food wrap around the cheese mixture and shape the mixture into a ball.
Chill for 8 hours or overnight.
2 Adjust the shape of the cheese ball if needed.
Remove the plastic food wrap.
Sprinkle the parsley on wax paper and roll the cheese ball in it to coat.
Place on a small plate and press the strips of red pepper into the ball for decoration if desired
