 Chopped1/2 Cup (16 tbs), finely chopped
 English cucumber
 Salt1/8 Teaspoon
 4 oz Danish cream cheese with herbs and spices
 Milk1 Tablespoon
 Light sour cream1 Cup (16 tbs)
 1 tbsp Danish blue cheese, mashed
 Pepper white1

Directions

MAKING
1. Allow cucumber sprinkled with salt to stand for 10 minutes. Using paper towels, squeeze out excess moisture.
2. Take a food processor or mixing bowl, pass milk and cream cheese and blend to a smooth mixture. Blend in blue cheese, chives or dill, sour cream, and pepper. Keep in the refrigerator till served.

SERVING
3. Take out, fold in cucumber and serve as dip with raw vegetables.
