Ingredients
6 cups small mushroom caps
2 tablespoons each lemon juice and cider vinegar
2 teaspoons olive oil
1 teaspoon salt
1/2 teaspoon each tarragon leaves and pepper
1/4 teaspoon ground thyme
Directions
In small saucepan (not aluminum or cast-iron) combine all ingredients; bring to a boil.
Reduce heat and let simmer for 5 minutes, stirring occasionally.
Let cool, then cover and refrigerate for at least 8 hours.
