Ingredients

 
2 pounds scallops, fresh or frozen
 
1 teaspoon dried thyme
 
1 teaspoon salt
 
1/2 cup margarine
 
1/4 teaspoon pepper
 
1/4 cup chopped parsley
 
2 cups rice, cooked

Directions

Preheat oven to 350°F.
Quickly rinse scallops with cold water; drain on paper towels.
Melt margarine, add parsley, thyme, salt, pepper.
In shallow baking dish arrange single layer of scallops; spoon margarine mixture over scallops.
Bake 5 minutes; shake pan to coat scallops on all sides with margarine.
Bake 10 to 20 minutes longer testing for doneness.
