Herb Roasted Chicken Recipe
Herb roasted chicken is an oven roasted chicken recipe. Prepared with a 3 herb medley, the herb roasted chicken is cooked with butter and seasoned to taste. Served with a side of choice, this is a simple yet utterly flavorful dish.
Ingredients
1 (3 to 3 1/2 pound) broiler fryer
3 cloves garlic, halved
2 bay leaves
1/3 cup mixed fresh basil, oregano, and thyme leaves
1/4 cup butter or margarine, melted
2 teaspoons chopped fresh basil
2 teaspoons chopped fresh oregano
2 teaspoons chopped fresh thyme
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
Additional fresh herbs for garnish
Directions
Rub skin of chicken with cut side of 2 pieces of garlic.
Place all garlic halves, bay leaves, and mixed herbs in cavity of chicken.
Truss chicken.
Combine butter, chopped herbs, salt, pepper, and paprika.
Place chicken, breast side up, in a shallow roasting pan; brush chicken generously with butter mixture.
Bake, uncovered, at 375° for 1 1/2 hours or until done, basting occasionally with remaining butter mixture during last half of baking.
Remove chicken to serving platter; garnish with fresh herbs.
