Herb Marinated Tomatoes Recipe
Ingredients
| Tomatoes | 2 | |
| Red wine vinegar | 1 Tablespoon | |
| Olive/vegetable oil - 2 tsp | ||
| Salt | 1/4 Teaspoon | |
| Powdered mustard - 1/8 tsp | ||
| Tarragon leaves | 1/8 Teaspoon, crumbled | |
| Thyme leaves | 1/8 Teaspoon, crumbled | |
| Oregano leaves - a dash | ||
| Pepper | 1 To taste | |
| Lettuce leaves | 4 | |
Directions
MAKING
1. In a shallow, one quart glass bowl, arrange the tomato slices with their sides overlapping a little
2. In a small bowl, barring the lettuce, mix together all the other ingredients and pour it over the tomatoes
3. Wrap plastic wrap over the bowl adn chill for an hour, basting the tomatoes several times in the marinade
SERVING
4. Line two salad plaes with two leaves of lettuce each, top with hafl the tomato slices and half the marinade adn serve
