Herb And Orange Grilled Chicken Recipe
Ingredients
| 4 broiler fryer chicken quarters | ||
| Garlic | 2 Clove (5gm), minced | |
| Orange peel | 1 Teaspoon, grated | |
| Salt | 1 Teaspoon | |
| Dried thyme leaves | 1/2 Teaspoon, crushed | |
| Rosemary leaves | 1/2 Teaspoon, crushed | |
| Pepper | 1/2 Teaspoon | |
| Orange juice | 1/2 Cup (16 tbs) | |
| Vinegar | 2 Tablespoon | |
| Worcestershire sauce | 1 Tablespoon | |
Directions
Mix together garlic, orange peel, salt, thyme, rosemary and pepper in small bowl.
Slip fingers between skin and flesh of chicken, leaving skin attached.
Spread 1/4 of herb mixture under skin of each chicken quarter, pulling skin back over spices.
Mix together orange juice, vinegar and Worcestershire sauce in another small bowl.
Place chicken on prepared grill, skin sides up, about 8 inches from heat source.
Cook about 40 minutes or until fork can be inserted in chicken with ease, turning and basting with orange juice mixture every 5 minutes.
