Heavenly Pie Recipe
Wait, just stop. Did you notice that a delicious Heavenly Pie recipe awaits you? Best enjoyed as a Dessert this recipe was taught to me by a dear friend who also happens to be a great chef. Ingredients
4 egg whites
1 cup granulated sugar
1/2 cup granulated sugar
Little grated lemon rind
1/8 teaspoon salt
1/4 teaspoon cream of tartar
4 egg yolks
3 tablespoons lemon juice
1 pint whipping cream
Directions
Beat egg whites until foamy; add cream of tartar and beat until stiff.
Add one cup of sugar gradually.
Use this to line bottom and sides of buttered 9-inch pie plate, hollowing out most of the centre and be careful not to spread too close to rim.
Bake in slow oven 275 degrees for 1 hour.
Cool in oven with door open and unit off.
Meantime, beat egg yolks, add 1/2 cup sugar, 3 tablespoons lemon juice, rind and salt.
Cook in double boiler about 8 to 10 minutes, remove and cool.
Add 1 cup whipped cream.
Fill pie shell (meringue), chill in refrigerator 24 hours.
Top with rest of whipped cream.
