Heavenly Eggplant Slices Recipe

Ingredients
1 large eggplant
2 tsp vegetable oil
3 tomatoes, cored and cubed
1 med yellow onion, finely chopped
1 tsp granulated sugar
1t. ginger root, finely chopped
1/4t. ground ginger
1/4 tsp salt
Dash pepper
3 tsp fresh parsley, chopped
Directions
Slice unpeeled eggplant in 1 in. (2.5 cm) slices.
Brush oil on both sides.
Arrange in single layer in a baking dish.
Place tomatoes in blender; blend to a puree.
In a large saucepan, combine tomato puree, onion, sugar replacement, ginger root, ground ginger, salt and pepper.
Cook and stir over medium heat until onions are translucent.
Pour sauce over eggplant slices.
Bake at 400°F (200°C) for 20 to 30 minutes or until eggplant is tender.
Garnish with parsley.
