Hearty Lamb Casserole Recipe

3 tablespoons margarine
 
Salt, freshly ground black pepper
 
8 lamb chops, shoulder or pork
 
8 potatoes, sliced and rinsed in cold water
 
2 large onions, finely chopped
 
1/4 cup parsley, finely chopped
 
2 cups water

Directions

Preheat oven to 375°F.
Melt margarine in skillet and when hot saute chops until brown on both sides; add chopped onions just to lightly brown.
Remove chops and onions to shallow oven serving casserole.
Sprinkle meat with parsley, salt, pepper.
Drain potato slices and add to chops.
Add 2 cups water to skillet over high heat; stir in all the brown meat juices.
Pour over casserole; cover and bake until meat is tender, about 1 hour.
