Hearty Vegetable Soup Recipe
Ingredients
| 1 1/3 cups Hearty Dry Soup Mix, well rinsed | ||
| Water | 12 Cup (16 tbs) | |
| 2 1/2 cups cubed butternut squash, peeled and cut into 1/2-inch chunks | ||
| 1 1/2 cups cubed parsnips or potatoes | ||
| 2 medium-sized carrots, sliced | ||
| 1 medium-sized onion, chopped | ||
| String beans | 1 1/2 Cup (16 tbs), chopped | |
| Parsley | 1/2 Cup (16 tbs), chopped | |
| 1 tablespoon chopped fresh dill or 1 teaspoon dried | ||
| 1/2 cup tiny green peas | ||
| Mushrooms | 1 Cup (16 tbs), sliced | |
| Vegetable bouillon cubes | 8 | |
| Salt | 2 Teaspoon | |
| 4 tablespoons vegetable oil or butter (optional) | ||
Directions
Combine all ingredients in a large soup pot. Bring to a boil. Reduce heat and simmer covered for 1 1/2 hours.
