Hearty Split Pea Soup Recipe

Ingredients
2 tbsp corn oil
2 medium size onions, minced
1 tsp celery seeds
1 bay leaf
1 cup dried split peas
1/2 cup hulled or pearl barley
10 cups chicken broth
3 carrots, minced
1 potato, peeled, diced
1/2 tsp basil
Salt and pepper
2 tbsp parsley, chopped
Directions
In a saucepan, heat oil.
Lightly brown onions.
Add celery seeds, bay leaf, split peas and barley.
Pour broth into mixture.
Bring to a boil.
Cover.
Over low heat, simmer 75 minutes.
Add carrots, potato and basil.
Continue cooking 15-20 minutes.
Season with salt and pepper.
Sprinkle with chopped parsley, if desired.
