Hearty Muffins Recipe
Ingredients
| Boiling water | 2 Cup (16 tbs) | |
| Bran | 2 Cup (16 tbs) | |
| Buttermilk | 2 Cup (16 tbs) | |
| Honey | 1/2 Cup (16 tbs), melted | |
| Eggs | 2 , beaten | |
| Whole wheat flour | 2 1/4 Cup (16 tbs) | |
| Jerusalem artichoke | 1/3 Cup (16 tbs) | |
| Flaxseed | 1 Cup (16 tbs) | |
| Baking soda | 2 1/2 Teaspoon | |
| Salt | 1 1/2 Teaspoon | |
| Raisins | 1 1/4 Cup (16 tbs) |
Directions
Pour boiling water over bran.
To this add buttermilk, honey and eggs.
Mix well.
Mix together flours, flaxseed, soda and salt.
Add liquid ingredients to dry and mix until blended.
Batter should not be too stiff.
Stir in raisins.
Bake at 350°F (180°C) for 20-30 minutes.
