Hearty Minestrone Gratin Recipe
This hearty minestrone gratin is a vegetable cheese gratin. Cooked with tomatoes, celery, zucchini, garbanzo beans and french bread along with oodles of cheese, the hearty minestrone is finished under the broiler. Flavored with italian herb mix, this hearty minestrone is guarateed to bring cheer to your dinner table.
Ingredients
1 cup diced celery
1 cup diced zucchini
1 can (2 ounces) tomatoes with liquid, chopped
2 cups water
2 teaspoons sugar
1 teaspoon dried Italian herb seasoning
1 can (15 ounces) garbanzo beans, drained
4 slices French bread, toasted
1 cup (4 ounces) Shredded Mozzarella Cheese
2 tablespoons Grated Parmesan Cheese
Freshly chopped parsley
Directions
Spray large saucepan or Dutch oven with nonstick cooking spray.
Over medium heat, saute celery and zucchini until tender.
Add tomatoes, water, sugar and herb seasoning.
Simmer, uncovered, 15 to 20 minutes.
Add garbanzo beans and heat an additional 10 minutes.
Meanwhile, heat broiler.
Place toasted French bread on broiler pan.
Top with mozzarella cheese.
Broil until cheese melts.
Ladle soup into bowls and top with French bread.
Sprinkle Parmesan cheese over each bowl and garnish with parsley.
