Directions

GETTING READY
1. Pre-heat the oven at 450F.

MAKING
2. In a cast-iron skillet, pour the olive oil, put the potatoes ,spread them out on the pan and let it cook for 2 minutes.
3. Once the potatoes start to stick at the bottom, add the onions, give it a quick toss, season with salt and pepper and pop it in the oven and let it cook for 10 minutes.
4. Add in the black beans, red pepper, parsley, spinach and give it a good mix.
5. Plate it in a dish and add some raw diced tomatoes.

SERVING
6. Season with some salt and pepper and pour some maple syrup over it before serving.
