Ingredients

 
1 broiler fryer chicken, cooked, skinned, boned and cut into chunks
 
1 cup dry small macaroni pasta, cooked and drained
 
3 tomatoes, cubed
 
1 cup sliced celery
 
1/2 cup chopped red bell pepper
 
3 tablespoons chopped green onion tops
 
1 teaspoon salt
 
1/2 teaspoon black pepper
 
1/4 teaspoon dried oregano leaves, crushed
 
1 cup chicken broth
 
1 clove garlic, pressed
 
1/4 cup wine vinegar

Directions

Mix together warm chicken, macaroni, tomatoes, celery, red pepper and onion in large bowl.
Sprinkle with salt, black pepper and oregano.
Place chicken broth and garlic in small saucepan; bring to a boil over high heat.
Boil 10 minutes or until broth is reduced to 1/2 cup.
Add wine vinegar and pour over salad, mixing well.
Refrigerate until chilled.
