Ingredients

 Oil2 Tablespoon
 Onion1 Large, chopped
 Garlic1 Clove (5gm), crushed
 Celery sticks3 , diced
 2 x 397 g (14 oz) cans tomatoes
 Chicken or fish stock900 Milliliter
 Dried oregano1/4 Teaspoon
 Dried basil1/4 Teaspoon
 Dried rosemary1/4 Teaspoon
 Rice grain65 Gram
 Green beans250 Gram, sliced
 Cod fillets750 Gram, cut into cubes
 Parsley2 Tablespoon, chopped
 Salt To Taste
 Pepper To Taste

Directions

Heat the oil in a saucepan.
Add the onion, garlic and celery and fry until softened.
Stir in the tomatoes with their juice, stock, herbs and rice.
Bring to the boil, then cover and simmer for 10 minutes.
Add the beans and continue simmering, covered, until the rice is tender.
Add the fish and simmer for 5 minutes or until the fish is tender.
Adjust the seasoning and sprinkle with parsley.
