Ingredients

 2 tablespoons butteir or margarine
 Onion1/2 Cup (16 tbs), chopped
 Beets1 Can (10oz), chopped
 Cabbage2 Cup (16 tbs), coarsely chopped
 Vegetable1 Can (10oz)
 Beef broth1 Can (10oz), condensed
 Water1 Cup (16 tbs)
 Lemon juice1 Tablespoon
 Sugar1 Teaspoon
 Pepper1/4 Teaspoon
 Sour cream1/2 Cup (16 tbs), garnish
 2 tablespoons chopped chives or green onions for garnish

Directions

1. In 3-quart microwave-safe casserole, combine butter and onion. Cover with lid; microwave on high 3 minutes or until tender, stirring once during cooking.
2. Stir in beets, cabbage, soup, broth, water, lemon juice, sugar and pepper. Cover; microwave on high 12 minutes or until boiling, stirring once during cooking. Let stand, covered, 5 minutes.
3. Meanwhile, in small bowl, stir together sour cream and chives. Ladle soup into bowls and garnish with sour cream mixture.
