As I was scratching my head and surfing the Internet for an easy to make recipe for my vegan friend, I happen to stumble upon this vegetable, zucchini, on one of the cooking sites. Zucchini is not wide used in the Asia so my first impression is that cucumber? Weird choice of vegetable to grill for my BBQ. After surfing the Internet and visiting Wikipedia, my doubt is cleared. I find this vegetable interesting so why not give it a try. Most of friends are amaze by the unique taste and texture of zucchini and with combination of my herb marinate it tastes even better.  Zucchini225 Gram
 Thyme1 Teaspoon
 Olive oil2 Teaspoon
 Black pepper To Taste
 Salt1⁄2 Teaspoon

* Cut the zucchini widthwise into 1/4-inch or so slices. Put the slices into large mixing bowl.
* Add the olive oil first and mix well. Then add in the remaining ingredients, thyme, salt , black pepper. Add a small portion at a time and mix well. Put the zucchini slices in the refrigerator at least 1 hour before grilling.
* Preheat the oven to 150 C.
* Set the zucchini slices on the grill and cook for 10 minutes before serving.

Cucumber is also wonderful in curries. I love it in green curry with scallops and shrimp. It adds a nice crunch! In Asia they also use lettuce in soups-sounds weird, eh? It's great! Just like grilled cucumbers. Thanks for showing us some wonderful Singapore recipes. I eagerly await more! What about a good family Laksa recipe? Any Nonya recipes in your family?????

That is true about zucchini-I don't recall seeing it in SE Asia, but many cucumbers as you mentioned. Grilled zucchini, and other squash and vegetables like eggplants, corn, onions all make for wonderful tasty veg meals. Just olive oil, grlic and some herbes of choice! It looks yummy.
