Healthy Lunch Salads Recipe Video
A healthy lunch with enough protein and vitamins is essential for keeping you fit and healthy especially when you have little time to spare for cooking. Protein based salads are the best on the go lunches and meals that you can take to work and enjoy! Dress it up and fork it! Bethanny Frankel shows you how to make easy salads for a great take-to-work lunch.
Ingredients
For the chicken salad:
1 cup grilled chicken, chopped
¾ cup celery, coarsely chopped
½ tbsp mayonnaise/soy mayonnaise
1 tsp pesto
Salt and pepper to taste
Mixed greens
For the tuna caper green salad:
2 cups mixed greens
Chopped or sliced tomatoes, desired amount
½ tuna, with juice
1 hard boiled egg white, chopped
½ tbsp capers
Salt and pepper to taste
½ tbsp balsamic vinaigrette
Directions
For the chicken salad:
In a bowl add the chicken, celery, mayonnaise and pesto.
Season with salt and pepper and toss to coat.
Arrange the greens on a plate.
Place the chicken salad on the bed of greens.
For the tuna caper green salad:
Arrange the bed of mixed greens.
Add the tuna and divide it equally into pieces.
Add in the egg whites and capers.
Season with salt and pepper.
Dress with the balsamic vinaigrette.
Toss to coat.
If you are taking a salad lunch to work, you may want to dress them just before you eat it for a better flavor. Take the dressing along in a small Tupperware or airtight cup or container.
