Ingredients

 Chicken1 Cup (16 tbs), chopped
 Celery3⁄4 Cup (12 tbs), coarsely chopped
 Mayonnaise1⁄2 Tablespoon
 For pesto1 Teaspoon
 Mixed greens2 Cup (32 tbs)
 Chopped tomatoes1 Cup (16 tbs) (Or Sliced Desired Amount)
 Tuna with juice1⁄2
 Hard boiled egg white1 , chopped
 Capers1⁄2 Tablespoon
 Salt To Taste
 Salt To Taste
 Pepper To Taste
 Pepper To Taste
 Balsamic vinaigrette1⁄2 Tablespoon

Directions

For the chicken salad:
In a bowl add the chicken, celery, mayonnaise and pesto.
Season with salt and pepper and toss to coat.
Arrange the greens on a plate.
Place the chicken salad on the bed of greens.

For the tuna caper green salad:
Arrange the bed of mixed greens.
Add the tuna and divide it equally into pieces.
Add in the egg whites and capers.
Season with salt and pepper.
Dress with the balsamic vinaigrette.
Toss to coat.

If you are taking a salad lunch to work, you may want to dress them just before you eat it for a better flavor. Take the dressing along in a small Tupperware or airtight cup or container.
