Healthy Bran Muffins Recipe

Ingredients
1 1/2 cups unprocessed bran
1/2 cup boiling water
1 cup all purpose flour
1 tablespoon baking powder
1/8 teaspoon salt
3/4 cup skim milk, at room temperature
1/4 cup molasses
1 large egg, at room temperature
2 tablespons vegetable oil
1 teaspoon vanilla extract
1/2 cup chopped dates
Directions
Heat the oven to 400 degrees.
Spray sixteen 2 by 1 3/16 inch (3 tablespoon) muffin cups with nonstick vegetable cooking spray.
Stir together the bran and boiling water and let stand at least 2 minutes.
In another bowl stir together the flour, baking powder and salt.
In a separate bowl combine the milk, molasses, egg, oil and vanilla, then stir in the bran mixture.
Make a well in the center of the dry ingredients, add the milk mixture and stir just to combine.
Stir in the dates.
Spoon the batter into the prepared muffin cups.
Bake for 15 to 20 minutes until a toothpick inserted in the center of one muffin comes out clean.
Remove the tin(s) to a wire rack.
Cool for 5 minutes, then remove the muffins from the cups and finish cooling them on the rack.
