Mixed Vegetable Couscous Recipe Video
This salad is low in fat, healty and tasty. Also it is suitable for vegetarians and vegans ( just the salad not the chicken ofcourse )
Ingredients
Couscous ( or bulgur ) about 400 grams
1 jar of roasted peppers in oil
2 bundles of spring onions
3 red onions
1 cucumber
8 small or 4 big tomatoes
flat leaf parsley
2 small aubergines
olive oil
garlic
salt and pepper
Directions
Prepare the couscous assaid on the packaging. Leave it to cool down.
Chop up the unions and slice the aubergines. Take 3 tablespoons of olive oil, 1 big clove of garlic and some grounded black pepper, mix it up, place the aubergines into the bowl with the oil and let them marinade. If you have garlic infused olive oil at home, use that.
Fry up the red unions untill caramilized and in the meantime, chop the spring onions into little rings. If he red unions are almost done, toss in the spring onions and fry them 2 minutes to soften a bit.
Grill the aubergines in a grillpan until golden. Keep them in a warm place.
Roughly chop the roasted peppers. Deseed and slice the cucumber. Wedge the tomatoes and add everything to the couscous. Finally add some chopped parsley. Stir everything , and add 2 tablespoons of olive oil, some pepper and salt according to taste.
