GETTING READY
1. In a saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
2. Preheat the oven to 350 degrees F or 170 degrees C.
MAKING
3. In a large skillet, over high heat, combine ground lamb, onion, garlic, thyme, basil and mustard. Sauté until lamb is browned and onion is soft.
4. Add the rice into the mixture and sauté until mixed well.
5. Stuff the acorn halves with the lamb-rice mixture.
6. Season with salt and pepper.
7. Place the stuffed acorns on a foil lined baking sheet.
8. Bake for about 30 to 40 minutes until the squash is tender.
SERVING
9. Serve warm. You can top the squash with parmesan cheese if you like.
