Ingredients

 1/2 small white cabbage, finely shredded
 Carrots2 , grated
 Spring onions1 Bunch (100gm), sliced
 75g ready-to-eat dried apricots
 Pumpkin seeds3 Tablespoon, toasted
 4 tbsp mixed chopped fresh herbs, such as parsley and mint
 Natural yogurt150 Milliliter
 2 tbsp half-fat creme fraiche
 Ground black pepper1 To taste
 Salt To Taste

Directions

Put all the ingredients in a large salad bowl, turning them together to mix.
Taste and adjust the seasoning, if necessary.
