Healthful Chicken Casserole Recipe

Ingredients

 
1 broiler fryer chicken, cooked, skinned and chopped
 
1 package (10 ounces) frozen spinach
 
1/4 cup finely chopped onion
 
1/2 teaspoon garlic powder, divided
 
8 ounces fresh mushrooms, sliced
 
2 tablespoons diet margarine, melted
 
1 cup low fat skim milk mozzarella cheese

Directions

Preheat oven to 350°F.
Cook spinach according to package directions, omitting salt; drain well.
Mix onion with spinach.
Arrange spinach mixture in bottom of 1 1/2 quart baking dish; sprinkle with 1/4 teaspoon garlic powder.
Arrange mushrooms on spinach; drizzle with melted margarine.
Place chicken on mushrooms; sprinkle with remaining 1/4 teaspoon garlic powder.
Top with mozzarella cheese.
Bake 30 minutes or until fork can be inserted in chicken with ease.
