Ingredients

 
1/2 cup boiling water
 
1/2 cup raisins
 
1 beaten egg
 
1/4 cup brown sugar
 
1 cup natural bran
 
1 cup quick rolled oats
 
1 cup whole wheat flour
 
1/4 cup raw wheat germ
 
2 teaspoons baking soda
 
1/2 teaspoon salt
 
1 cup buttermilk (or skim milk soured with lemon juice)

Directions

Pour boiling water over raisins; cool.
In a large bowl, blend egg and sugar.
Stir together bran, oats, flour, wheat germ, soda and salt.
Add to egg and sugar, with buttermilk, cooled raisins and water.
Stir to blend thoroughly.
Pour into greased 9x5x3 inch pan.
Bake at 350°F for 45 minutes or until wooden pick inserted in centre comes out clean.
Cool and keep in refrigerator.
Suitable for diabetics.
Loaf will cut into 25 slices.
1 slice equals 1 starch.
