Head Em Off At The Pass White Chili Recipe
Head Em Off At The Pass White Chili is a chicken meat chili prepared with vegetables and beans. Made with peppy salsa and cooked in chicken broth, this chicken vegetable chili also has beans in it. Herbed with oregano for a fresh taste, it is flavored with shredded mozarella for a cheesilicious texture. served with salsa topping, it is a pleasure to spoon into!
Ingredients
1/2 cup fresh or frozen chopped onions
1 tablespoon olive oil
1 1/2 cups chopped cooked chicken or 2 (5-ounce) cans chopped chicken
1/2 cup chicken broth
2 (15-ounce) cans cannellini beans,undrained
1 teaspoon dried oregano 1/2 teaspoon celery salt
1 ( 11 ounce) jar Bandito Salsa divided
1 1/2 cups shredded mozzarella cheese, divided
Directions
In 2-quart saucepan, cook and stir onions in olive oil until translucent.
Add chopped chicken, mixing thoroughly, then add chicken broth.
Stir in cannellini beans, oregano, celery salt and 1/2 cup salsa.
Simmer over medium heat 10 minutes, gently stirring occasionally.
Just before serving, stir in 1 cup mozzarella cheese.
Divide among serving bowls and top each with a portion of remaining mozzarella cheese and salsa.
