Hawaiian Roast Chicken Recipe
Ingredients
1 broiler-fryer (2 1/2 to 3 pounds)
1/2 teaspoon poultry seasoning
1/4 teaspoon salt
3 tablespoons melted butter or margarine
1/2 cup water
2 1/2 cups Hawaiian Stuffing
Golden Pineapple Glaze
Pineapple rings, grape clusters (optional)
Directions
Rinse chicken with cold water; drain and dry inside and outside.
Rub inside cavity with the poultry seasoning and salt.
Stuff chicken with Hawaiian Stuffing, truss and brush with 3 tablespoons melted butter or margarine.
Place chicken on rack in roasting pan; add water and cover.
Bake in a moderate (375°) oven about 1 hour.
Brush chicken with Golden Pineapple Glaze.
Continue cooking, uncovered, brushing frequently with glaze, for 1/2 hour longer, or until drumstick-thigh joint moves easily.
To serve, garnish with pineapple rings and grape clusters, if you wish.
