Ingredients
1 Cup Unbleached Flour
1/2 Cup Whole Wheat Flour
1 Tsp. Cinnamon
1 Tbsp. Baking Powder Pinch Of Salt
1/2 Cup Coconut
1/2 Cup Brown Rice, Cooked
2 Eggs
2/3 Cup Milk
1/4 Cup Safflower Oil
1/3 Cup Brown Sugar
3 Slices Canned Pineapple
Directions
Mix white and whole wheat flour, baking powder, cinnamon, salt, coconut and rice in a large bowl.
Whisk eggs, milk, oil and brown sugar in small bowl.
Make a well in dry ingredients and quickly stir in the moist ingredients.
Spoon into muffin tins and then poke one-eighth piece of pineapple slice into center of each.
Bake until golden.
Bake at 375 degrees 25 minutes
