 Eggs3
 Butter/Margarine2⁄3 Cup (10.67 tbs), melted
 Buttermilk/Yogurt2⁄3 Cup (10.67 tbs)
 Mashed bananas1 1⁄4 Cup (20 tbs) (3 Medium)
 Chopped macadamia nuts/Walnuts2⁄3 Cup (10.67 tbs)

Directions

Sift together the flour, sugar, baking powder, soda and salt in a large bowl.
In a smaller bowl, beat eggs and blend together with margarine and buttermilk.
Add mashed bananas to this mixture.
Make a well in the dry ingredients and add the banana-egg-milk mixture, mixing lightly.
Fold in the chopped nuts.
Spoon into greased muffin cups and bake until golden brown.
Bake at 350 degrees 20 to 25 minutes
