 White bread slice12
 Butter- as needed softened
 Sour Cream- 1 cop
 Green bell pepper1/2 Cup (16 tbs), diced
 Onion2 Tablespoon, minced
 Pimiento1/2 Cup (16 tbs), chopped
 Wine vinegar2 Tablespoon
 Sugar1 Tablespoon
 Salt1 Teaspoon
 Pepper1/4 Teaspoon
 Cabbage3 Cup (16 tbs), finely shredded
 White Tuna- 1 can 9 1/4 ounce), drained and flaked
 Pineapple slice6
 Tomato12
 Cheddar Cheese Slices- 12 thin (1 ounce each)

Directions

GETTING READY
1) Toast the bread and brush with butter.
2) In a bowl, mix together sour cream, bell pepper, onion, pimiento, vinegar, sugar, salt, and pepper.
3) Gently fold in cabbage and tuna.

MAKING
4) Smear the tuna mixture equally over 6 slices of toast and top with a pineapple slice.
5) Arrange the slices over the broiling pan.
6) Slice the remaining toast diagonally in half and place a half at each side of sandwich.
7) Arrange tomato slices on each toast triangle.
8) Place 2 cheese slices to cover entire open-faced sandwich.
9) Broil the sandwich about 6 inches from heat until cheese bubbles.

SERVING
7) Serve hot with bed on small mixed salad if desired.
