Hawaiian Style Broiled Chicken Recipe

Best Movie Nominee, The Descendent takes place in Hawaii. While you may not be able to bring Hawaiian weather to your home, you can certainly bring the flavors. If you like that sweet-meets-salt taste, this dish will transport your taste buds to the Aloha State.

 Broiler chicken2 , halves (2 pound each)
 Salt and pepper1
 Pineapple1 Medium, sliced
 Peach1 Medium, halves
 Butter1⁄2 Cup (8 tbs)
 Cornstarch1 Teaspoon
 Lemon1 Teaspoon, peeling
 Lemon juice1⁄4 Cup (4 tbs)
 Pineapple juice1⁄3 Cup (5.33 tbs)
 Onion2 Tablespoon, finley chopped
 Soy sauce1 Teaspoon
 Thyme1⁄4 Teaspoon

Directions

Combine ingredients for Pineapple Sauce and set aside.

Brush chicken halves with melted butter and season to taste. Place skin side down on broiler pan. Broil 7 inches from heat for 25 minutes or until light golden brown, brushing occasionally with more butter throughout cooking. Turn chickens and continue broiling for 15-20 minutes. When there is 10 minutes of cook time remaining remove from oven, garnish with pineapple and peaches around the outside of chicken. Brush entire dish with pineapple sauce and continue cooking for 10 minutes. Serve chicken and fruit over a bed of hot rice.
