Hawaiian Salad With Curry Dressing Recipe
Ingredients
| 2 medium-size or large avocados | ||
| 3 or 4 bananas | ||
| About 2 tablespoons lemon or lime juice | ||
| Oranges | 2 Large | |
| 1 medium-size pineapple, peeled, cored, and cut into pieces | ||
| Chopped ginger | 2 Tablespoon, candied | |
| Lime-curry dressing | ||
| Macadamia nuts | 1/2 Cup (16 tbs), coarsely chopped | |
| Thin lime slices | ||
Directions
Peel, pit, and cut avocados into chunks.
Cut bananas in 1-inch-thick diagonal slices.
Mix avocado and bananas with lemon juice.
Remove peel and white membrane from oranges; add sections with pineapple to avocado mixture.
Sprinkle with ginger and cover and chill, if made ahead.
Prepare lime-curry dressing.
Toss fruit gently to mix, sprinkle with macadamias, and garnish with thin lime slices.

Hi Dhill, the best way to make the dressing is to use the zest and juice of one lime, (about 2 1/2 tablespoons lime juice) 1/2 teaspoon salt, 1-1 1/2 teaspoon curry powder, 1 teaspoon fresh grated ginger (or 1/4 teaspoon dried ginger, 1/2 tablespoon honey (or brown sugar, add more if you like) and whisk with about 1/4 cup (4 tablespoons) olive/canola or vegetable oil. Hope you try the recipe. Its really yummy. This dressing goes well with soo many salads and is great for quinoa or bulgur wheat too!
