Hawaiian Pineapple Pie Recipe
Ingredients
| 20 oz. crushed pineapple in juice | ||
| 1 pkg. sugar-free vanilla pudding | ||
| Water | 1/2 Cup (16 tbs) | |
| Butter/Margarine | 1 Teaspoon | |
| Pie crust | 1 , frozen | |
| 1/2 cup frozen lowfat nondairy whipped topping | ||
| Coconut flakes | 2 Teaspoon | |
Directions
Drain the can of pineapple pieces, saving the juice.
In a saucepan, combine the pudding mix, water, and reserved pineapple juice.
Cook over medium heat.
Stir constantly.
When mixture comes to a full boil, add the pineapple chunks and butter.
Stir well.
Pour into the pie crust.
Cool.
Just before serving, top with the non-dairy topping and sprinkle with coconut flakes, if desired.
