Hawaiian Game Hens Recipe

1 Cornish game hen, thawed
1/2 teaspoon garlic powder
Salt and pepper to taste (optional)
1 can (8 ounces) DOLE® Pineapple Slices, undrained
1 tablespoon honey
1/2 teaspoon grated lemon peel
1/2 teaspoon dried tarragon leaves, crushed
1 cup DOLE® Mini Peeled Carrots or carrot chunks
1/2 pound DOLE® Asparagus tips or green beans
Directions
Preheat oven to 375°F.
Cut hen in half lengthwise.
Sprinkle with garlic powder, salt and pepper.
Place on rack in roasting pan; cover.
Bake 20 minutes.
Meanwhile, drain juice from pineapple into small casserole dish.
Stir in honey, lemon peel and tarragon.
Arrange pineapple slices on rack with hen.
Brush pineapple and hen with some of pineapple juice mixture.
Bake, uncovered, 10 to 15 minutes more until tender and golden.
Meanwhile, place carrots and asparagus in casserole with remaining pineapple juice mixture.
Cover with plastic wrap.
