Hawaiian Chicken Sandwiches Recipe
Ingredients
| 2 cups minced, cooked chicken meat | ||
| Celery | 1/3 Cup (16 tbs), minced | |
| Mayonnaise | 1/3 Cup (16 tbs) | |
| Salt | 1 Teaspoon | |
| Pepper white | 1/4 Teaspoon | |
| Pecans | 1/4 Cup (16 tbs), finley chopped | |
| 6 large round hard rolls | ||
| 6 pineapple rings, drained well | ||
| Mild cheddar cheese | 1/3 Cup (16 tbs), grated | |
Directions
Preheat broiler.
Mix chicken, celery, mayonnaise, 1/2 teaspoon salt, pepper, and pecans.
Taste for salt and add more if needed.
Slice tops off rolls and pull out soft centers—hollows should be large enough to hold about 1/2 cup chicken mixture. (Save centers for bread crumbs.)
Fill rolls with chicken mixture, top with pineapple, and sprinkle with cheese.
Broil 3-4" from heat 2-3 minutes until cheese melts.
