 2 1/2 to 3 pound chicken, cut into serving pieces
 Soy sauce2 Tablespoon
 Lemon juice1 Tablespoon
 1 tablespoon packed dark brown sugar
 Ground ginger1/2 Teaspoon
 Cayenne pepper1 Pinch
 1 11-ounce can mandarin oranges, drained, syrup reserved
 1 8-ounce can pineapple chunks, drained, syrup reserved
 Flour3 Tablespoon

Directions

1. Arrange chicken skin side down in a 10-inch round baking dish, with the meaty portions toward the outside of the dish. Combine soy sauce, lemon juice, brown sugar, ginger, and cayenne pepper. Brush mixture over chicken. Cover with wax paper. Microwave at Cook Cycle 1 (power level 10) for 13 minutes. Drain the chicken, reserving 1/2 cup of the juices.
2. Arrange chicken skin-side-up in baking dish. Cover with fruit. In a 4-cup glass measure or 1-quart bowl, combine reserved liquid from chicken, 1 cup syrup from fruits, and the flour. Blend until smooth. Pour this mixture over the chicken and stir. Cover chicken and microwave at Cook Cycle 2 (power level 5) for 9 to 13 minutes, or until chicken is fully cooked and sauce is thickened, stirring once. Let stand, covered, 5 minutes before serving.
