Hawaiian Chicken Recipe
Ingredients
| Butter | 2 Ounce | |
| Mushrooms | 4 Ounce, chopped | |
| Onion | 1 Small, chopped | |
| 1 1/2 lb. roasting chicken joints | ||
| Plain flour | 1 Ounce | |
| Evaporated milk | 1 Can (10oz) | |
| Seasoning | ||
| 4 oz. Patna rice | ||
| 8 rashers streaky bacon, rolled and grilled | ||
| Pineapple chunks | 1 Can (10oz), drained (Garnish) | |
Directions
Melt butter and lightly fry the mushrooms, onion and chicken.
Add the flour and cook for a few minutes.
Dilute evaporated milk to 3/4 pint with cold water and add gradually to chicken.
Season, cover and simmer until chicken is tender, 30-40 minutes.
Cook rice and arrange on serving dish, place joints on top, pour sauce over.
Serve garnished with bacon rolls and pineapple chunks.
