Hatcher's Dry White Wine Recipe
Ingredients
| 10 lbs. Thompson's seedless grapes | ||
| Sugar | 4 Cup (16 tbs) | |
| Water | 2 1/2 Quart | |
Directions
Sort and stem grapes.
Mash thoroughly and cover with water.
Let stand (preferably in stone crock) for 2 to 3 days until fermented.
Strain and mash through thin cloth or sieve.
Add sugar to juice.
Strain again into gallon jug.
Force short glass tube through cork and attach rubber tube to upper end.
Press cork tightly into jug, sealing with wax to make airtight and put end of rubber tube into jar of water.
Gas from wine will escape into water.
All sediment will fall to bottom of jug and wine will gradually clear.
Do not shake or jar container, but let stand 2 to 3 months until fermentation stops.
Siphon off and bottle.
