Harvest Apple Pie Recipe

Ingredients
1/2 c. butter 125 mL
1/3 c. sugar 75 mL
1/4 tsp. vanilla 1 mL
1 c. flour 250 mL
250 g pkg. cream cheese 250 g pkg.
1/4 c. sugar 50 mL
1 egg
1 tsp. instant coffee powder 5 mL
1/3 c. sugar 75 mL
1/2 tsp. cinnamon 2 mL
4 c. peeled, sliced green apples 1L
Directions
Preheat the oven to 425°F (220°C).
Combine the butter, sugar and vanilla in a medium bowl and gradually blend in the flour until the mixture is crumbly.
Spread this dough on the bottom and sides of a 9" (23 cm) pie plate.
Press firmly to make sure that the dough is formed into a solid shell.
Beat together the cream cheese and 1/4 c. (50 mL) sugar until well blended and fluffy; beat in the egg and instant coffee powder until well combined.
Spread this mixture evenly on top of the crust in the pie plate.
Combine the 1/3 c. (75 mL) sugar, cinnamon and peeled sliced apples.
Mix well.
Arrange the apple slices in a pinwheel pattern over the cream cheese mixture.
Bake for approximately 10 minutes.
Reduce the temperature of the oven to 375°F (190°C) and bake for a further 25 minutes.
Remove from the oven and let cool slightly before placing in the refrigerator for at least 3 hours prior to serving.
