Ingredients
| Boned Pork Shoulder - 1 whole (6 pounds) | ||
| Eggs | 2 | |
| Bread crumbs | 4 Cup (16 tbs) | |
| Whole kernel corn | 1 , canned | |
| Onion | 1 | |
| Salt | 2 Teaspoon | |
| Pepper | 1/2 Teaspoon | |
| Water | 1/2 Cup (16 tbs) | |
| All purpose flour | 4 Tablespoon | |
| Spiced Apple Rings - 1 jar | ||
Directions
GETTING READY
1) Using a sharp knife, cut off the fat
2) Into a bowl, beat the eggs using a fork
3) Add the breadcrumbs, corn, onion, salt, pepper and sage.
MAKING
4) Into the cavity of the meat, pack the stuffing to fill
5) Shape the meat into a round and fasten with string at 1inch gap
6) Place the meat into a roasting pan with the fat side down
7) Pour water over or cover the pan with a lid or foil and roast
8) Bake for 5 1/2 hours at 325 F till the meat is tender
9) Take the pork off the pan, and strain the liquid into a measuring jar
10) Return the meat to the roasting pan to roast for an additional 30 minutes till browned richly
11) Remove pork to a platter and allow to rest
12) Skim the fat off the top of the liquid
13) Add 4 tablespoons of the oil to a frying pan
14) Add in flour and blend well
15) cook over a low fire and add water if required
16) Let the sauce thicken slightly; season with salt and pepper
